Before I get emails - I was out of olives or I would have put them on there too!!! We did a big platter at lunch and they all went then so I had to do with what I had... Anyhoo - I love hummus. I can't remember a time in my life when I didn't. I've been eating it since I was a baby. Not my grandmother is not keen on the idea that I buy it instead of make it from scratch, but I gotta do what I gotta do... I found a brand at costco at all places that is quite amazing. It's every bit as good as what I make. This was a good wrap and I would suggest you give it a shot - I'd add olives if you have them, they will add a lot to the dish. You can make this one just about anything, but a wrap works well...

Ingredients

 
1 spinach wrap (monster size)
 
.25 cup hummus (or more I didn't measure just went with it)
 
.5 cup chopped lettuce
 
sliced red onion (or any sweet onion - use as much as you like)
 
2 seeded roma tomatoes (sliced or diced)
 
Half a hot house cucumber cut into sticks (or as much as you want)
 
.25 cup feta cheese (or more if you like)
 
A little bit of love...

Directions

If cold - bring the wrap to room temp. Lay out the wrap - lay on the hummus, lettuce, onion, cucumber, tomato, cheese - fold in the sides and roll over to wrap up. Cut on the bias - eat & enjoy...

Chef is sharing one of his favorite wrap recipes which he makes with hummus. He prepares his vegan wrap with hummus and few simple ingredients from his kitchen cabinet. Again, he is very flexible with the recipe and allows using any vegetable of your choice, of course there should be hummus spread no matter if the quantity is little less or more. They are delicious quick meals with healthy spinach tortilla as wraps.

Wow, this just goes to show you that just because something is "vegetarian" does NOT mean it's low cal, lol. All that hummus, cheese, and that huge burrito, I bet this is loaded with calories! You can save a ton of calories by using the Ole Mexican Food brands Xtreme Wellness Spinach Tortilla it is absolutely AMAZING! and only has 74 calories (though not as big) and of course using way less hummus. If it's a good brand, a little goes a long way! And all that Feta cheese? Cut that in half and now we're taking!
