Directions

GETTING READY
1. Finely chop tomato, onion, garlic and basil.
2. Roughly chop spinach and romaine lettuce.
3. Finely grate the ginger.

MAKING
4. In a non-stick pan, add olive oil and saute the chopped onions and garlic for a 2 minutes.
5. Add the tomatoes and stir to mix. Add spinach, romaine lettuce into the pan(do not mix), cover and cook for 7 minutes. Stir to mix.

SERVING
6. Top with grated ginger and basil leaves and serve.
