The Best Raw Kale Salad Ever Recipe Video
Ingredients
2 bunches kale, washed, dried and chopped
1/2 medium red onion, chopped
1 medium apple, seeded and chopped
2 teaspoons garlic, minced
2 teaspoons fresh ginger, peeled and grated
1 whole, ripe avocado, peeled and chopped
2 tablespoons fresh lemon juice
2 tablespoons olive oil
2 teaspoons Tamari soy sauce or Bragg's Amino Acids
1/2 cup cashews, raw, chopped
Directions
Wash, de-stem and chop kale; place in large bowl. Add lemon juice and avocado, and with your hands mix together until the avocado is smooth. Add the remaining ingredients and mix well. Serve immediately.

this was YUMMY! i used red kale--so pretty. lemon olive oil and lime juice. planning on adding roasted pine nuts next time.

This salad really is that good! I made a few sub's/changes/additions...
I used a stick blender to puree the avocado w/ the garlic, ginger, oils, lemon juice and tamari. It makes a dressing of sorts that binds the salad nicely. I also left a third of the avocado in small chunks and added it in for texture and visual.
substitutions:
sweet onion and green onion for red;
walnuts for cashews (could also use pecans);
flaxseed oil for some of the olive oil;
added:
cooked, drained navy beans
sesame seeds
next time:
will try diced pears for the apples
and will serve aside quinoa or stirred together.
I can't wait, but I have to finish what I already made first, which will be no problemo! :^)

Until you've tasted this salad, you don't know how really good it is! It is a wonderful alternative to your regular salad. On top of that, it is so healthful, and so easy to prepare. I used raw chopped almonds in mine because I had them on hand. I also omitted the sesame oil because I didn't have any. Please try this. You won't be sorry.
