1 1/2 cups (355 ml) all-purpose flour
 
1 tbs (15 ml) baking powder
 
1/3-1/2 cup (80-120 ml) sugar
 
1/2 tsp (3 ml) salt, optional
 
1 egg, slightly beaten
 
1 cup (240 ml) skim milk
 
1/3 cup (80 ml) vegetable oil

Directions

Blueberry Muffins: Add blueberries along with the dry ingredients.
Cinnamon & Dried Fruit Muffins: Add dried fruit and cinnamon along with the dry ingredients.
