| Spanish onion | 1 Small, thinly sliced | |

| Capers | 1 Tablespoon | |
| Olive oil | 1⁄4 Cup (4 tbs) | |
| Dried green bell peppers | 1⁄2 Tablespoon | |
| Red pepper flakes | 1⁄2 Tablespoon | |
| Dried red bell peppers | 1⁄2 Tablespoon | |
| Black pepper powder | 1⁄2 Tablespoon | |
| Milk | 3 Tablespoon |

Directions
1)Preheat the oven to 375 degrees.
2))Rub the skillet with oil and thinly slice the potato and layer it over a cast iron skillet and bake it for 15 minutes at 375 degrees.
3)In a bowl crack open the eggs and add milk and blend well add the black pepper, red pepper flakes, red and green bell pepper powder and blend well.
4)Add to the egg mixture manchego cheese, herring and capers and mix well and set aside.
MAKING:
5)In a pan heat oil and fry the onions until soft.
6)Add onions to the potatoes which are baked and layer with tomatoes. Sprinkle with black pepper and cheese and bake in the oven at 375 degrees for 20 minutes.
SERVING:
7)Cut into parts, serve hot and enjoy!
