Spanish Octopus Recipe Video
Chef Anthony Bonett, from Alison at Blue Bell, makes a whole Spanish Octopus. He gets help from host Tinamarie and Comcast SportsNet's Derrick Gunn.
Ingredients
| Spanish octopus | 1 Large | |
| Garlic head | 1 Small, split in half | |
| Serrano pepper | 1 Small, split in half | |
| Olive oil | 1⁄2 Cup (8 tbs) | |
| Sherry vinegar | 1 Tablespoon |
Directions
Yields 4 Servings
Method of Preparation
In a large braising pan, heat the olive oil until almost smoking
Carefully add whole octopus and sauté well on all sides.
Add hot pepper, garlic head and splash of vinegar.
Cover pan and roast in 350 degree oven for 1 ½ to 2 hours. Octopus should be tender when cooked
Remove from pan and allow to cool slightly and cut into 2 inch lengths
