Thanksgiving Pudding Recipe

Ingredients

 
15 oz. pumpkin
 
2 tsp pumpkin pie spice
 
2 tsp olive oil
 
1 tsp fructose
 
2 tsp vanilla extract
 
7 pkts. Concentrated acesulfame-K
 
1 cup skim milk
 
4 egg whites

Directions

Put the pumpkin, pumpkin pie spice, olive oil, fructose, vanilla extract, and acesulfame-K into a mixing bowl; use a wire whisk to mix completely.
In a small saucepan heat the milk just to the boiling point.
Whisk into the pumpkin mixture.
In a separate small bowl use an electric mixer to heat the egg whites.
Fold the egg whites into the pumpkin-milk mixture.
Be sure it is well mixed.
Pour the mixture into 10 separate custard cups that have been coated with non-stick cooking spray.
Place the filled custard cups into one very large or two medium ovenproof pans.
Carefully pour boiling water into the baking pan(s), taking care that water doesn't spill into the filled cups.
Bake in a preheated 375°F (190°C) oven for 35 minutes.
A knife inserted in the center of each custard should come out clean.
Chill before serving.
