Thai Peanut Chicken Recipe Video

Ingredients

 
1 lb. boneless chicken breasts cut into thin strips
 
½ cup low sodium soy sauce
 
2 tbsp juice and zest from one lime (zest before juicing)
 
3 tbsp garlic gusto seasoning
 
1 inch piece ginger root, grated
 
1 tbsp roasted garlic oil
 
½ cup peanut butter
 
1 cup chicken broth
 
Red pepper flakes
 
½ cup peanuts

Directions

Combine soy, lime juice and zest, garlic seasoning and ginger in a zipper bag.
Add in the chicken, tilt and coat well.
Marinate for 1 hour.
Drain marinade into a bowl and set aside.
In a large frying pan, heat oil over high heat.
Add chicken and sauté for 5 minutes.
Remove from pan and set aside.
Add marinade in the pan and bring to a boil.
Add peanut butter, broth and a pinch of red pepper flakes to taste.
Add in the chicken now and toss to coat with the sauce.
Serve over pasta, sprinkled with peanuts.

I have tried Thai style Sipcy Green chicken recipe and this one with peanut butter is something yet to try. Thai chickeen curries are quire flavorful and peanut butter is something I love to add in any of my recipes. Apart from the taste, I feel, peanut butter will also give the dish the desired thickness! I hope it's the normal peanut butter you get in supermarkets?

Thais never use peanut butter, as they don't have it in Thailand. VBG Use fresh peanuts, roasted in a skillet then chop-much better flavour. Most of the peanut butter contains other ingredients like stabliizers, preservatives, even sugar, etc. Almonds would fight the peanut flavour. Also a good splash of nam pla IE fish sauce is great in this dish. Shanti/Mary-Anne
