Ingredients

 
3/4 cup rice vinegar
 
2 tablespoons chili sesame oil
 
2 tablespoons soy sauce
 
1 1/2 tablespoons chopped peeled fresh ginger
 
1 tablespoon Dijon mustard
 
Salt and pepper
 
1 12 ounce package fresh Chinese or Japanese water noodles or linguine pasta, freshly cooked
 
3/4 pound peeled cooked shrimp
 
2 6 ouncejars marinated artichoke hearts, drained
 
1 cup chopped green onions
 
1/4 cup chopped fresh cilantro
 
1/4 cup chopped fresh mint

Directions

Combine first 5 ingredients in blender and puree.
Season dressing with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
Combine remaining ingredients in bowl.
Toss with enough dressing to coat.
Pass extra dressing separately.
