 Rice flour1 Cup (16 tbs)
 Cake flour6 Tablespoon
 Salt1⁄2 Teaspoon
 Lime stone water/Sparkling mineral water3⁄4 Cup (12 tbs)
 Bean sprouts4 Ounce
 Shrimp8 Ounce, peeled, deveined, cut into 0.5 inch pieces
 Scallions/0.5 cup thinly sliced garlic chives3 , trimmed, thinly sliced
 Garlic cloves2 , minced
 Peanut oil/Corn oil1 Cup (16 tbs) (For Shallow Frying)

Directions

1) In a medium bowl, combine the rice flour, cake flour and salt. Add
the limestone water or sparkling mineral water and whisk into a smooth batter. Allow to stand for 30 minutes.
2) To make the fritters, add the bean sprouts, shrimp, scallions or garlic chives and garlic into the batter and stir to coat thoroughly with the batter.
3) In a shallow pan, heat up about 1/4 to 1/2 inch of the oil and put 6 spoonsfulls of the batter and fry evenly for 1 minute on both the sides until golden brown and crip.
4) Remove and drain well on kitchen towels.
5) Serve immediately with the chili sauce.
