You should be able to find them at most Asian grocery stores; most metropolitan neighborhoods have a few around nowdays. You CAN use other types of noodles other than rice noodles; I've even read where some recipe authors say that it is common to find the dish made with basically semolina/spaghetti noodles in local villages and street vendor stands around Thailand.

I made this and it turned out GREAT! Yum-O! The hardest part was tracking down some noodles. I wasn't able to find the flat, thick noodles, but finally found some pad thai noodles. I've also had this with mint leaves which was a fantastic flavor layer. Once you have all the stuff, it's a piece of cake to make. This is my new favorite recipe!

I love Kai's recipes! NE Thai/Laos-Chinese style,. You can usually find dried rice noodle (chantaboon) thin, medium or wide in most Asian markets. Just soak for 20 mintes in hot water. Pad Kee Mao is a favourite! I do not use alcohol as these are called Drunkard's Noodles - Pad Kee Mao and are popular for a late night dinner after drinking. It is a popular street food in Thailand. I make it a bit different as learned in Thailand over the many years of visiting the Kingdom. Many variations-all yummy. Pad Kee Mao is Drunkard's Noodles NOT Drunken noodles. Pad means to stir fry, Kee Mao is one who drinks too much. http://www.ifood.tv/recipe/drunkards_noodles_gkuay_dtiow_pad_khee_mao

Interesting-first time I have seen Pad Kee Mao (Drunkard's Noodles) containing alcohol.I know it is a popular dish late at night with many men consuming Pad Kee Mao after a night of drinking such as Mekong. :-) Shanti/Mary-Anne
