Thai Chicken Fried Rice With Basil Recipe Video

Ingredients
Cooked jasmine rice or long grain rice - 4 cups, cooled
Big garlic cloves - 6
Thai red and green chili peppers - 2 to 4 or
Serrano peppers - 1 to 2
Cooking oil - 1/4th cup
Chicken - 1 to 1 1/2 lbs, cut into bite sizes
Oyster sauce - 3 tbsp
Fish sauce - 2 tbsp
Sugar - 1tsp
Red bell pepper - 1, medium sized, cut into julienne
Fresh sweet basil leaves - 2 cups
Cucumber - 1, cut into bite sizes
Cilantro sprigs - 1/2 cup, for garnish
Directions
MAKING
1 In a deep pan or wok, heat oil over high heat until it starts to smoke.
2 Add in the crushed garlic and crushed chili peppers.
3 Stir quickly making sure they don not burn.
4 Add in chicken pieces at once.
5 Stir well.
6 Add in the oyster sauce, fish sauce and sugar.
7 Cook, stirring until the chicken is cooked through.
8 Add in the cooked rice.
9 Stir quickly to blend the sauces with rice.
10 Add in the red bell pepper, stirring constantly.
11 Add in the basil leaves while stirring.
12 Remove from the heat.
SERVING
13 Serve at once garnished with sliced cucumbers and cilantro sprigs.

I always put sausage shrimp carrots green peppers onions garlic corn and peas. And cook it with soy sauce!! That's how i make fried rice like this.

Not casting-they are a mother, Dim Geefay and daughter, Cathy Geefay team in El Dorado Hills (Sacramento, CA. area). The husband, Ernie Geefay produces the videos. There was even a show on their local cable of this mother-daughter team. Love her videos!
