Thai Banana Chicken Recipe

Ingredients
| 1 chicken breast, skinned and boned | ||
| Butter | 1 Tablespoon | |
| 1/2 cup chicken stock or chicken bouillon | ||
| Nutmeg | 1/2 Teaspoon | |
| 2 red bananas, halved lengthwise | ||
| Jalapenos | 3 , seeded and chopped | |
| 4 ti leaves or 1 bunch spinach | ||
Directions
In a frying pan, melt 2 teaspoons butter over medium high heat.
Add chicken and brown on all sides.
Add stock and nutmeg and simmer, covered, for 10 minutes.
Line individual casseroles with 2 ti leaves in each, criss crossed, or with overlapping spinach leaves.
Add 1 piece of chicken to each casserole and spoon 2 tablespoons of stock into each.
Scatter half the chopped chiles over each.
Briefly saute bananas in remaining butter.
Criss cross bananas over chicken, fold leaves tightly over all, and bake in a 350 degree oven for 30 minutes.
Add chicken and brown on all sides.
