Ingredients

 Sesame oil3 Tablespoon
 350 g/12 oz chicken breast, sliced thinly
 Shallots8 , sliced
 Garlic2 Clove (5gm), finely chopped
 Green chilli1 , finely chopped
 2.5 cm/1 inch piece fresh root ginger, grated
 Green bell pepper1 , thinly sliced
 3 courgettes (zucchini), thinly sliced
 Ground almonds2 Tablespoon
 Ground cinnamon1 Teaspoon
 Oyster sauce1 Tablespoon
 50 g/1 3/4 oz/1/4 cup creamed coconut, grated
 Salt To Taste
 Pepper To Taste

Directions

1. Heat the sesame oil in a wok, add the chicken, season with salt and pepper, and stir fry for about 4 minutes.
2. Add the shallots, garlic, ginger and chilli and stir-fry for 2 minutes.
3. Add the (bell) peppers and courgettes (zucchini) and cook for about 1 minute.
4. Finally, add the remaining ingredients and seasoning. Stir-fry for 1 minute and serve.
