Thai Shrimp and Pasta Salad Recipe
Ingredients
| Linguine | 2 Ounce, uncooked | |
| Shredded carrot | 1/2 Cup (16 tbs) | |
| 1/2 pound medium shrimp, cooked and peeled | ||
| Boston lettuce leaves | 1 Cup (16 tbs), thinly sliced | |
| Cilantro leaves | 1/4 Cup (16 tbs) | |
| 2 tablespoons chopped unsalted, dry-roasted peanuts | ||
| Lime juice | 1/4 Cup (16 tbs) | |
| Cilantro | 2 Tablespoon, chopped | |
| 1 tablespoon chopped green onions | ||
| Fish sauce | 2 Tablespoon | |
| Sugar | 2 1/2 Teaspoon | |
| Vegetable oil | 2 Teaspoon | |
| Grated ginger | 1 Teaspoon, peeled | |
| Garlic | 2 Clove (5gm), minced | |
Directions
MAKING
1. In a large saucepan, add four cups of water and bring it to a boil; add pasta nad cook for almost ten minutes
2. Add carrots and cook for half a minute, drain and rinse under cold water; drain and let it cool down
3. In a large bowl, combine shrimp, pasta mixture, peanuts, lettuce and cilantro and toss them well
4. In another bowl, combine lime juice, garlic, fish sauce, green onion, ginger, cilantro, onions and oil and whisk a little to blend
5. Pour it over the pasta mixture and toss again to coat well
SERVING
6. Serve as appropriate
