 Thai green curry paste20 Gram

 Kaffir lime leaves2
 Sugar1 Teaspoon
 GREEN CURRY PASTE
 Coriander seeds1 Tablespoon (INGREDIENTS)
 Cumin seeds1 Teaspoon (INGREDIENTS)
 15 green bird's eye chillies
 Shallots3 Tablespoon, finely chopped (INGREDIENTS)
 Garlic1 Tablespoon, finely chopped (INGREDIENTS)
 Ginger1 Teaspoon, finely chopped (INGREDIENTS)
 1 tsp of finely sliced lemon grass (from the base
 Kaffir lime1/2 Teaspoon, finely chopped (INGREDIENTS)
 1 tsp of finely chopped coriander root
 Black peppercorns5 To taste (INGREDIENTS)
 Salt1 Teaspoon (INGREDIENTS)
 Shrimp paste1 Teaspoon (INGREDIENTS)

Directions

Fry the Thai green curry paste in 2 tbsps of oil.
As the oil separates, add the fish sauce, coconut milk, basil leaves and the chicken meat.
Cook till the chicken is almost done.
Add the coconut milk, basil and kaffir lime leaves.
Taste and season with sugar if the curry is too spicy.
Garnish with red chillis.
