Directions
1.In a wok roast the chilly, until they are black. Take the seeds out and separate the pods.
2.In the same wok , roast the garlic in 2 Teaspoon of oil , until it turns golden , fry the 1 Cup shallots and lemon grass.
MAKING
3.In a food processor ground the dried chilly pods, fried garlic, shallots and lemon grass.
4.In a pan, add the shrimp paste into the oil and let it fry .
9.Pop in the chilli mixture to the shrimp paste. To that you add 1 Cup of shallots, 50 Gram garlic, tamarind paste and 2 Teaspoon lemon grass and mix it well.
10.Add the black molasses to the wok and stir for a couple of minutes.
11.Squeeze in some lime juice for the citrus flavor.
SERVING
12.Home made nam prig pad is ready and can be preserved for a few days.
