Thai Flavoured Whole Chilli Fish Recipe
Ingredients
| Whole fish | 4 Small | |
| 1 red chilli, seeded and finely sliced | ||
| MARINADE | ||
| Coriander | 1 Tablespoon, chopped | |
| Grated ginger | 1 Teaspoon | |
| Garlic | 1 Clove (5gm), crushed | |
| Chilli | 1/2 Teaspoon | |
| Sugar | 1 Teaspoon | |
| Turmeric | 2 Teaspoon | |
| Peanut oil | 1 Tablespoon | |
| Vinegar | 1 Tablespoon | |
| Water | 1 Tablespoon | |
Directions
1.Clean fish and rinse under cold running water.
Pat dry with absorbent kitchen paper and arrange in a deep tray.
2.To make marinade, combine coriander, ginger, garlic, chilli paste, sugar, turmeric, oil, vinegar and water.
Pour over fish and rub well into the skin and flesh.
Cover and refrigerate for 2 hours.
3.Barbecue or grill fish for 3-4 minutes each side or until flesh flakes when tested with a fork.
Serve fish with any remaining
