Ingredients

 Cucumbers4 Cup (16 tbs), thinly sliced
 1 cup thinly sliced red onion
 Mint leaves1/4 Cup (16 tbs), thinly sliced
 1 tablespoon grated lemon rind
 Lemon juice1/4 Cup (16 tbs)
 Sugar2 Tablespoon
 Grated ginger2 Tablespoon, peeled
 Rice wine vinegar2 Tablespoon

Directions

1. Combine all ingredients; toss gently to coat. Cover and chill 1 hour, stirring occasionally.
