Thai Cucumber Toss Recipe
Ingredients
| Cucumbers | 4 Cup (16 tbs), thinly sliced | |
| 1 cup thinly sliced red onion | ||
| Mint leaves | 1/4 Cup (16 tbs), thinly sliced | |
| 1 tablespoon grated lemon rind | ||
| Lemon juice | 1/4 Cup (16 tbs) | |
| Sugar | 2 Tablespoon | |
| Grated ginger | 2 Tablespoon, peeled | |
| Rice wine vinegar | 2 Tablespoon | |
Directions
1. Combine all ingredients; toss gently to coat. Cover and chill 1 hour, stirring occasionally.
