Thai Cucumber Tomato Salad Recipe
Ingredients
| Cucumber | 1 Medium, peeled (SALAD) | |
| 1 medium tomato, cut into 8 wedges | ||
| 2 green onions, cut into 1/2-inch pieces | ||
| Cilantro | 4 Tablespoon, chopped (SALAD) | |
| Sugar | 1 Tablespoon (DRESSING) | |
| Lime juice | 3 Tablespoon (DRESSING) | |
| Soy sauce | 1 Tablespoon (DRESSING) | |
| Dash cayenne pepper, if desired | ||
Directions
Cut cucumber into 8 lengthwise spears; cut each spear crosswise into 1/2-inch slices.
Cut tomato wedges in half crosswise.
In large bowl, combine all salad ingredients; toss lightly.
In small bowl, combine all dressing ingredients; blend well.
Pour over salad mixture; toss lightly to coat.
Cover; refrigerate about 30 minutes to blend flavors.
