Ingredients

 Cucumber1 Medium, peeled (SALAD)
 1 medium tomato, cut into 8 wedges
 2 green onions, cut into 1/2-inch pieces
 Cilantro 4 Tablespoon, chopped (SALAD)
 Sugar1 Tablespoon (DRESSING)
 Lime juice3 Tablespoon (DRESSING)
 Soy sauce1 Tablespoon (DRESSING)
 Dash cayenne pepper, if desired

Directions

Cut cucumber into 8 lengthwise spears; cut each spear crosswise into 1/2-inch slices.
Cut tomato wedges in half crosswise.
In large bowl, combine all salad ingredients; toss lightly.
In small bowl, combine all dressing ingredients; blend well.
Pour over salad mixture; toss lightly to coat.
Cover; refrigerate about 30 minutes to blend flavors.
