Thai Beef Salad With Cucumber Dressing Recipe
Ingredients
Cucumber Dressing
1 lb. extra-lean (90% lean) ground beef
1/2 red pepper, cut in thin strips
6 mushrooms, quartered
2 green onions, diagonally cut into 1-inch pieces
1 garlic clove, minced
1 tablespoon seasoned rice vinegar
1 teaspoon soy sauce
Salt and freshly ground pepper
Lettuce leaves
3 ounces ramen noodles, cooked
12 cherry tomatoes, halved
Mint sprigs
Directions
Prepare Cucumber Dressing; set aside.
Brown ground beef in medium skillet.
Drain.
Add red peppers, mushrooms, onions and garlic; cook until tender.
Stir in vinegar and soy sauce; season with salt and pepper to taste.
Arrange lettuce leaves on four luncheon-size plates.
Top with noodles and ground beef mixture.
Garnish with cherry tomatoes and mint sprigs.
