Getting popular? Humm it is one of the most popular for many years. I began cooking Thai even before our first trip to Thailand in 1986! There are over 1000 Thai restaurants in California alone. Even local markets like Safeway carry MANY Thai ingredients. In London Thai cuisine was quite popular back 20 years ago, same in Hong Kong, New York, etc. Re your "Thai" recipe-wjhere is the must have balance of hot-sweet-sour-salty of Thai-taste? BTW Thai pizza is simply the best!

Tempe thai food says :

Thai food is an increasingly popular fare served in storefront cafes and elegant restaurants throughout the country. Its aromatic and often spicy flavors are delicious testament to Thailand’s unique culture and environment. Thai food is not always hot, although many of its most famous dishes, including red and green curries, are very spicy and not for the timid. The hot and humid Thai environment influenced its cuisine in a number of ways. Historically, food preservation was a problem in many tropical countries.
