Directions
Cover with water 2 inches above beans; let soak overnight.
Drain beans; cover with water.
Stir in next 8 ingredients; bring to a boil.
Cover, reduce heat, and simmer 1 hour.
Brown sausage in a large skillet, stirring to crumble; drain well.
Stir into bean mixture.
Cook, uncovered, an additional 15 minutes.
Remove bay leaf and ham bone; stir in parsley.
Serve over cooked rice.
