3/4 cup dried black beans 175 mL
3/4 cup chunky salsa 175 mL
1/3 cup each finely chopped sweet green and red pepper 75 mL
2 tbsp finely chopped green onion 25 mL
1 tbsp chopped fresh coriander 15 mL
1 tsp lime juice 5 mL
1/2 tsp salt 2 mL
Directions
In saucepan, cover beans with 3 times their volume of cold water; let soak overnight.
Drain and cover with same amount of fresh water; bring to boil.
Reduce heat; simmer over medium low heat for 1 hour or until tender.
Drain and rinse.
In bowl, toss together warm beans, salsa, green and red pepper, onion, coriander, lime juice and salt.
