Ingredients
1 cup (250 ml) solid shortening
1/2 cup (125 ml) sugar
1 cup (250 ml) firmly packed brown sugar
2 eggs
1 teaspoon (5 ml) vanilla extract
2 cups (500 ml) all-purpose flour
1 teaspoon (5 ml) baking soda
1 teaspoon (5 ml) baking powder
1/2 teaspoon (2 ml) salt
1 cup (250 ml) seedless raisins
2 cups (500 ml) corn flakes
Directions
Preheat oven to 350°F (180°C).
Assemble Mixer.
In large mixer bowl, cream shortening, sugars, eggs, and vanilla extract at MEDIUM-LOW.
Add remaining ingredients except raisins and corn flakes and mix at LOW until flour is moistened then at MEDIUM until well mixed.
Stir in raisins and cornflakes on LOW.
Drop by teaspoonfuls onto greased cookie sheets.
Bake in preheated oven for 12 to 15 minutes.
Cool on racks.
