Tex Mex Meat Loaf Recipe
Ingredients
1 pound lean ground beef
1 1/2 cups Tomato Salsa or prepared salsa
1 cup frozen corn kernels, thawed and drained
6 ounces mushrooms, finely chopped
2 green onions, including tops, finely chopped
1/4 cup plain dry bread crumbs
2 large egg whites
1/4 teaspoon salt
Directions
1 Preheat the oven to 375° F.
Lightly grease a 9" x 5" x 4" loaf pan.
In a large bowl, combine the beef, 1 cup of the salsa, the corn, mushrooms, green onions, bread crumbs, egg whites, and salt.
Press the mixture into the loaf pan.
2 Bake the meat loaf, uncovered, for 50 minutes or until the juices run clear and the loaf is set.
Remove from the oven and carefully invert onto a large serving platter.
Spoon the remaining 1/2 cup of salsa over the top and serve with Sauteed Summer Squash and corn bread.
