Teriyaki Steak Recipe

Ingredients

 2 pound beef sirloin steak,
 1 to 1 1/4 inches thick
 Soy sauce1/2 Cup (16 tbs)
 Water1/2 Cup (16 tbs)
 Brown sugar1 Tablespoon
 Ginger1 1/2 Teaspoon

Directions

Diagonally slash outer edge of fat on steak at 1 inch intervals to prevent curling (do not cut into lean).
Score meat (cut lightly in a crisscross pattern) and place in shallow glass dish.
Heat remaining ingredients to boiling, stirring occasionally; pour on meat.
Cover; refrigerate at least 2 hours, turning meat occasionally.
Set oven control at broil and/or 550°.
Remove meat from marinade.
Broil 3 to 4 inches from heat about 10 minutes on each side for rare, about 12 minutes for medium.
Cut meat across grain at a slanted angle into 1/4 inch slices.
Play up the Oriental origin and serve with Snow Peas and Carrot Nuggets (page 62), buttered rice and, as dessert, lemon sherbet and Polynesian Cookies
