Ingredients
4 (5-ounce) lean lamb loin chops (1 inch thick)
1/2 cup dry sherry
1/2 cup firmly packed brown sugar
1/2 cup low-sodium soy sauce
2 tablespoons water
1 tablespoon peeled, minced gingerroot
Vegetable cooking spray
Directions
Trim fat from chops.
Place chops in a large zip-top heavy-duty plastic bag.
Combine sherry and next 4 ingredients; stir well.
Pour over chops; seal bag, and shake until chops are well coated.
Marinate in refrigerator 8 hours, turning bag occasionally.
Remove chops from marinade.
Place marinade in a small saucepan.
Bring to a boil; reduce heat, and simmer 2 minutes.
Coat grill rack with cooking spray; place on grill over medium-hot coals.
Place chops on rack, and cook 7 to 9 minutes on each side or to desired degree of doneness, basting occasionally with marinade
