Ingredients
1 Egg White
2 Tsp. Cornstarch
2 Tsp. Dry White Wine
Leftover Chicken, cut into thin strips
2 Tbs. Peanut Oil
3 Slices Ginger Root, cut 1/8" thick 1/2 Cup Snow Peas
1/2 Cup Bean Sprouts
1/2 Cup Green Beans
4 Water Chestnuts, sliced thin
1 Small Dried Hot Red Pepper (optional)
Walnut Halves
Soy Sauce
Directions
Amounts of vegetables can be varied according to taste and what is on hand.
Combine egg white, cornstarch and wine.
Dip chicken in this and set aside.
Place oil in wok or skillet at room temperature.
Turn on heat; add ginger root.
Stir-fry until oil is hot.
Remove ginger; add walnuts.
Stir-fry until brown; remove.
Add chicken; stir-fry until warm.
Add vegetables and water chestnuts; stir-fry until tender but crunchy.
Pour off excess oil.
Add walnuts.
When ready to serve, add a dash of soy sauce.
