Tempura Recipe
Tempura is a famous Japanese recipe. Tempura gets its taste from deep fry Seafood served with vegetable and flavored with lemon. Tempura is inspired by many chefs around the world.
Ingredients
8 oz. perch or sea salmon fillets
8 oz. shrimp; halved if large
2 large onions, sliced and separated
1/2 head cauliflower, separated in flowerets
1 eggplant, halved lengthwise, halves sliced 1/4 in. thick
Salt
Pepper
Lemon juice
Fat for deep frying, heated to 375°F
Batter:
1 egg yolk
2 cups cold water
2 1/4 cups flour
1/8 teaspoon baking soda
2 tablespoons cornstarch
1/4 teaspoon monosodium glutamate
Sauce:
4 tablespoons sherry or sake
4 tablespoons soy sauce
Salt
1/2 cup beef or fish broth
1 small piece finely chopped ginger root
Icicle white radish, coarsely shredded
Directions
Cut fish fillets into bite sized pieces.
Season fish, shrimp and vegetables with salt and pepper.
Sprinkle with lemon juice and set aside about 30 minutes.
Combine egg yolk with cold water.
Mix flour and next 3 ingredients.
Combine mixtures and beat until smooth.
Dip fish and vegetables in batter and deep fry in hot fat until golden.
Combine sherry, soy sauce, salt and broth.
Heat and add ginger root.
Cool; pour over radish or spinach in bowls.
Season fish, shrimp and vegetables with salt and pepper.
