Tempeh Reuben Recipe

Ingredients
8-oz pkg (240 g) Original Soy Tempeh, cut into quarters
2 tbs (30 ml) olive oil pinch onion powder pinch garlic powder
1-2 tbs (15-30 ml) tamari soy sauce
RUSSIAN DRESSING:
1/2 cup (120 ml) mayonnaise or soy mayo
1/4 cup (60 ml) ketchup
1 tsp (5 ml) horseradish sauce
1 tsp (5 ml) onion, chopped
1/2 tsp (3 ml) Worcestershire sauce
4 slices rye bread
3 tbs (45 ml) butter, softened, optional
3/4 cup (180 ml) sauerkraut, warmed
3 oz (90 g) Swiss cheese, sliced
Directions
Cut tempeh in half, then slice to half its thickness.
Pour oil into skillet and coat both sides of tempeh.
Sprinkle with a dash of both garlic and onion powder and saute over medium-low heat until golden.
Add soy sauce and cook a minute more.
Russian Dressing: Mix together mayonnaise, ketchup, horseradish, onion and Worcestershire sauce.
Butter one side of the bread or toast bread.
Build sandwiches, butter side out, as follows: 1 tbs dressing, tempeh, sauerkraut then cheese.
Saute sandwiches until bread is golden brown.
