1/2 lb (230 g) spaghetti
1/2 cup (120 ml) tofu mayonnaise
2 cloves garlic, crushed
2 tbs (30 ml) brown rice vinegar
1 tsp (5 ml) curry powder
1 green or red pepper, diced
1 medium zucchini, sliced
1/4 lb (115 g) snow peas, blanched or raw
6.1-oz pkg Original or Marinated Pacific Tempeh Burgers, cubed
1/4 cup (60 ml) fresh basil, minced
1/2 cup (120 ml) fresh parsley, chopped
Directions
Break spaghetti into thirds and cook to al dente.
In a small bowl whisk torn mayonnaise, garlic, vinegar and curry powder.
Gently mix with pasta.
Add green pepper, zucchini, snow peas and the tempeh cubes.
Top with a mixture of basil and parsley.
