These gluten-free teff and peanut butter cookies are simple and make an excellent treat when you need one. You can use either brown or white teff flour for this recipe.

Directions

Mix together flour and salt.
Set aside.
Gently melt the coconut oil.
Mix the peanut butter and maple syrup in a mixer.
Add the coconut oil.
Add the vanilla.
Slowly add the flour and salt mixer until all ingredients are well-combined.
Drop the dough by rounded spoonfuls on a greased cookie sheet.
Flatten with a fork (as you do with peanut butter cookies).
Bake in 350 degree oven for 15 minutes.
