Directions

Put the water for the tea on to heat.
When it is medium hot, pour in a few tablespoons of it into the pot.
Put it back on the fire and let it come to a boil.
Throw out the water you put in to warm the pot and drop in, for every 2 cups of tea, 1 teaspoon long-leaf (this is better flavoured) tea and 1/2 teaspoon small-leaf (this is for colour) tea.
Pour in the boiling water, cover the pot and put on the tea-cosy.
Let the tea drew for about 4-5 minutes.
Stir well before pouring out.
Keep hot milk and sugar handy.
