| Lancashire cheese | 4 Ounce | |
| Butter - a knob around 3 tablespoons (3 x 15 ml spoon) | ||
| English mustard | 1 Teaspoon | |
| Brown bread - 2 slices | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
MAKING
1) In a heavy saucepan,stir cheese until melted over minimum heat.
2) Now add the knob of butter, mustard, salt and pepper.
3) Toast the slices of bread, spread the cheese mixture over them and place under a fierce grill for a few seconds while the cheese bubbles and browns.
SERVING
4) Serve at once.
(The regionally minded can ring the changes by making Scotch rabbit, with Dunlop cheese and 1 oz (25 g) butter.
Irish rabbit is made with Guinness and 1 oz (25 g) chopped pickled gherkin, and Yorkshire rabbit (or Buck rabbit) is made by using Cheshire cheese and topping with a poached egg-)
