 15 ml. / 1 tablespoon grated lemon rind
 175 g. / 6 oz. brown sugar
 Tea1.25 Large, strained
 300 ml. / 10 fl. oz. dark rum
 175 ml. / 6 fl. oz. brandy
 600 ml. / 1 pint soda water (optional)

Directions

Put the lemon rind and sugar in a large bowl and crush together with the back of a spoon.
Pour in the tea and stir until the sugar has dissolved.
Cool, then strain into a large serving bowl.
Stir in the rum and brandy.
If you wish to dilute the punch, stir in the soda water just before serving.
