Spiced Tea Eggs Recipe
I serve the Tea Eggs for breakfast or brunch parties. I am quiet famous for this yummy egg dish. Little do they know that the secret behind the pretty and tasty dish is this wonderful Tea Eggs recipe!
Ingredients
12 eggs
4 qts. water (16 cups)
1/4 cup black tea leaves
2 star anise
1-inch piece cinnamon stick
1 tablespoon salt
1/2 teaspoon five-spice powder
Directions
Place eggs in a large saucepan.
Cover with 2 quarts water and bring to a boil over high heat.
Reduce heat to medium and cook 7 minutes.
Drain; let stand until cool.
Lightly tap eggs to crack shells, but do not peel.
Bring 2 quarts water to a boil in a large saucepan.
Add tea leaves, star anise, cinnamon stick, salt and five-spice powder.
Carefully add cracked eggs.
Reduce heat to low.
Cover and simmer 1 hour.
Let cool; drain.
Peel while still warm or thoroughly cooled.
Cover with 2 quarts water and bring to a boil over high heat.
