Tava (Mixed Vegetables) Recipe
Ingredients
| 3/4 pound eggplant, cut into 1/2-inch cubes | ||
| 3/4 pound potatoes, cut into 1/2-inch cubes | ||
| 3/4 pound zucchini, cut into 1/2-inch cubes | ||
| Okra | 1/2 pound, frozen | |
| Green pepper | 1 , sliced | |
| Onions | 1/2 pound, slivered | |
| 3/4 pound ground beef or lamb | ||
| Salt | 2 Teaspoon | |
| Black pepper | 3/4 Teaspoon | |
| Ground allspice | 1/2 Teaspoon | |
| Hot red pepper | 1 Pinch | |
| Lemon juice | 1/2 Cup (16 tbs) | |
| Tomatoes | 1 pound, peeled | |
Directions
In a large lightly oiled baking serving dish, layer the vegetables in this order: eggplant, potatoes, zucchini, okra, green pepper, onions.
Sprinkle the meat over the top.
Add the salt, black pepper, allspice and red pepper.
Sprinkle with the lemon juice.
Cover with the sliced tomatoes.
Bake at 400 degrees for about one hour.
Reduce heat to 350 degrees and bake thirty minutes more, or until all the vegetables are tender.
If the top is dry or burning, cover the casserole with aluminum foil.
Serve hot with rice pilaf or cheese beurek.
