Recipe Story

Tausi is a filipino loan word from fukien chinese, meaning Tao= Beans and Si= Fermented/In Brine (salt and water) which simply means in english Fermented Black Beans. Tausi is just another common dish in the Philippines that is commonly served at lunch. i for one self, love this dish specially if the fish used is a grouper. you will surely love the unique taste of this dish that comes with an exquisite aroma that "tausi" gives!

Ingredients

 
- 1 kilo fish (preferably grouper, tilapia/ st. peter's fish & milkfish) cut into serving pieces or halved
 
- 180 grams or half cup black beans in can (fermented/in brine syrup), drain the syrup or brine
 
- oil for frying and saute
 
- 50-100 grams ginger (skinned, minced)
 
- 4-5 cloves garlic (minced)
 
- 2 pieces onion (thinly sliced)
 
- 2 pieces small plump tomatoes (sliced)
 
- half teaspoon of black peppercorn
 
- 1 to half cup water
 
- 2-3 tablespoon of soy sauce
 
- 1 tablespoon sesame oil
 
- 1 tablespoon sugar

Directions

the fish:
clean the fish or remove scale if using tilapia/st. peter's fish or milk fish. drain well. fry in cooking oil until brown. drain in paper towels. arrange in a large platter. set aside.

the "tausi" sauce:
heat a wok or a sauce pan. put cooking oil. saute ginger and garlic until fragrant. add onion and tomatoes. cook until onion is transluscent. pour in the black beans, and ground black peppercorns. stir-fry for 1-2 minutes.

add water, soy sauce, sugar and sesame oil. mix gently. bring to boil. remove from heat.

the final step:
set the fried fish on a deep bowl or deep platter, pour over the fried fish the "tausi" sauce.

serve immediately.
for gourmet cooking: add bell pepper and use grouper as fish

yes ganesh, its really simple. just fry the fish and saute onions, garlic and the beans. once cooked, just pour the tausi sauce over the fish and viola! a sumptuous meal right in front of you. btw, thanks too! :D
