Tasty Boiled Raisin Muffins Recipe
Ingredients
1/2 cup raisins 125 mL
1 1/2 cups water 375 mL
1/2 cup shortening 125 mL
2/3 cup brown sugar 150 mL
1 beaten egg
1 tsp vanilla 5 mL
1 1/2 cups all purpose flour 375 mL
1 tsp baking powder 5 mL
1 tsp soda 5 mL
1/4 tsp salt 1 mL
Directions
Measure raisins and water into a saucepan and cover.
Simmer 20 minutes and let cool.
Drain liquid into a container.
Cream shortening and brown sugar together until fluffy.
Beat in the egg and vanilla.
Add raisin liquid and raisins.
Sift dry ingredients together and stir into the raisin mixture.
Mix well and spoon into buttered muffin pans.
Bake for 15 to 20 minutes or until centre is firm at 350F (180C).
