Tartar Sauce Recipe

Knockout anyone and everyone with this kick ass Tartar Sauce recipe. The marriage of the incredible flavors of Vegetable with other ingredients is the secret to this Tartar Sauce recipe. This Tartar Sauce makes a compelling Side Dish for most party meals. In my opinion, if one is a chef, one ought to have a personal recipe of Tartar Sauce, just like I do.

Ingredients

 
2 large egg yolks, at room temperature
 
1 tablespoon (15 ml) fresh lemon juice
 
1 teaspoon (5 ml) white wine vinegar
 
1 teaspoon (5 ml) Dijon-style mustard
 
1/2 teaspoon (2 ml) salt
 
Pinch white pepper
 
1 cup (250 ml) vegetable oil,at room temperature
 
1 green onion
 
1 tablespoon (15 ml) drained capers
 
1 small sweet gherkin
 
2 tablespoons (30 ml) chopped fresh parsley

Directions

To make mayonnaise, bowl must be at room temperature; if bowl is cold, fill with hot water, then empty bowl and dry thoroughly.
Combine egg yolks, lemon juice, vinegar,mustard, salt and pepper in medium bowl; whisk until smooth.
Add half the oil, drop by drop, whisking continuously, to thoroughly incorporate oil.
Whisking continuously, add remaining oil in slow steady stream.
Trim and thinly slice green onion.
Mince capers and gherkin.
Fold green onion, capers, gherkin and parsley into mayonnaise.
Refrigerate covered until ready to serve.
