Tarragon Rack Of Lamb Recipe
Ingredients
2 tbsp oil
1 lamb rib roast, prepared
1/2 cup semisweet white wine, heated
1 garlic clove, crushed
1/2 tsp tarragon
Salt and pepper
1/2 cup heavy cream
2 tbsp capers
Directions
Preheat oven to 400 °F (205 °C).
In a frying pan, heat oil.
Brown roast lamb all over.
Transfer to an ovenproof dish.
Pour in wine.
Add garlic and tarragon.
Season with salt and pepper.
Roast in oven 10 minutes.
Remove roast lamb from oven.
Coat with cream.
Sprinkle with capers.
Roast in oven 20 minutes.
