Tarragon Baked Cornish Game Hens Recipe
Ingredients
| Cornish game hens - 3, cut in half lengthwise | ||
| Lemon juice | 2 Tablespoon (Basting Sauce:) | |
| Tarragon | 1 Tablespoon, dried (Basting Sauce:) | |
| White wine | 1/2 Cup (16 tbs) (Basting Sauce:) | |
| White button mushrooms | 1 Cup (16 tbs) (Basting Sauce:) | |
| Garlic powder | ||
| Ground pepper | 1/4 Teaspoon (Basting Sauce:) | |
| Brown rice | ||
| Grapes | ||
| Fresh parsley | ||
Directions
MAKING
1 In a bowl, add all the basting sauce ingredients and mix well.
2 Lightly rub garlic powder on each half of game hen on both sides.
3 Place on a baking rack in a shallow pan bone side down.
4 Place in a preheated 375 degrees farenheit oven.
5 Bake for 20 minutes and drizzle sauce over them.
6 Baste hens every 10 minutes with sauce from bottom of the pan until cooked.
7 Total baking time is about 1 hour to 1 hour 15 minutes, depending on size of the hens.
8 Put a cup of whole mushrooms in the sauce in the bottom of baking pan, during the last 20 minutes
SERVING
9 On a bed of cooked brown rice serve the hens
10 Garnish with mushrooms, grapes, and sprigs of fresh parsley.
