Tapioca Lime Fluff Recipe
Ingredients
| Scant 1/3 cup quick-cooking tapioca | ||
| Water | 2 1/2 Cup (16 tbs) | |
| Sugar | 3/4 Cup (16 tbs) | |
| Butter | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Lime juice | 1/4 Cup (16 tbs) | |
| Lime rind | 1/2 Teaspoon, grated | |
| Egg whites | 2 | |
Directions
Mix tapioca, water, sugar, butter and salt in a saucepan and heat to boiling, stirring constantly.
Remove from heat and add lime juice and rind.
Beat egg whites until stiff.
Pour hot tapioca mixture slowly over them, beating well while pouring.
Cool; then chill thoroughly before serving.
