Tapas Style Spicy Tomato Squid Recipe
Ingredients
| 2 baby squid | ||
| 75 ml/2 1/2 fl oz olive oil | ||
| 2 garlic cloves, peeled but left whole | ||
| Smoked paprika | 2 Teaspoon | |
| 1 bird's-eye chilli, finely chopped | ||
| Cherry tomatoes | 24 | |
| 1 red pepper, very finely sliced | ||
| Juice 1 lime | ||
| Parsley | 1 Tablespoon, chopped | |
| Crusty bread, to serve | ||
Directions
GETTING READY
1. Under running water clean the squid, pulling away the tentacles and removing the quill and discard.
2. Cut the tentacles into slices and the rest into rings.
MAKING
3. In a skillet, warm the olive oil, add the garlic and saute until lightly browned.
4. Remove and discard the garlic using a slotted spoon.
5. Add the paprika, chilli, tomatoes and pepper and saute for 5-6 minutes, until the tomatoes are softened.
6. Add the squid and saute it for 2 minutes
SERVING
7. Dish out and sprinkle lime juice and parsley.
8. Serve with crusty bread.
