Tangy Chicken Recipe

Ingredients
Chicken – 2 broiler fryer, cut into serving pieces
Water – 2 ½ cups
Bay Leaves – 2
Onion – 1, stuck with cloves
Stalks of Celery – 2
Salt – 2
Pepper - ¼ teaspoon
Thyme – ¼ teaspoon
Flour – 3 tablespoons
Lemon – 1, sliced

Directions
MAKING
1) In a kettle, place the chicken and cover with a tight fitting lid
2) Tip in the water, bay leaves, onion, celery, salt, pepper, thyme
3) Bring the mixture to a boil and then lower the flame to simmer for about 50 minutes
4) Take off from the heat, and strain the broth to measure 2 ½ cups
5) Then mix together the flour with the stock, stirring continually to get a smooth sauce
6) Add the lemon slices to the stock
7) Tip in the chicken and heat gently
SERVING
8) Serve warm with some parsley garnished atop
