Tangerine-Soba noodle & seared Scallops Recipe

Boil H20, cook soba noodles. Cool, coat with seseme oil, chill. In a stainless bowl, combine Tangerine juice, soy sauce, peanut butter, sesame oil, ginger tangerine zest and chilli flakes (optional but recommended!) Next julienne red peppers, red onion, cleaned snow peas, and 1" broccoli flowerettes, green beans, and julienned carrots, blanch, make sure there still crunchy. Next pat dry Sea scallops, 1# for this recipie. Season with white pepper, kosher salt, and sugar. Heat Saute pan and Sear on 1 side for 30 secs. flip over and remove from pan. Scallops should still be not cooked all the way through. Carry over cooking time will finish them through. Lastly toss fresh cilantro, Green Beans and all of the other veggie mix together. Re-heat Soba noodles and toss. Arangle on colored plate, or bowl, top with caramelized scallops, julienned scallion, chopped peanuts and squeeze of lime.

Im from Nantucket and I specialize in Seafood. I like to blend alot of seafood in all of my cuisine. this dish is quick and can have some different variations. Here in Boston Scallops are a hit! Different variations keep it fresh! For more heat add some chilli flakes or even hot peppers bruinose. ie pablano, serrona or scotch bonnet.

Ingredients

 
1/4 cup Tangerine Juice
 
3 tbl low sodium soy
 
3tbl Crunchy Peanut Butter
 
2 tbl Ses oil toasted
 
3 tsp finely grated ginger fresh
 
3 tbl cilantro
 
1/4 tsp chilli flakes
 
3 tsp tangerine zest
 
1.5 cups snow peas cleaned
 
10 oz. Cooked soba noodles ( coated in sesame oil)
 
2 tsp sugar
 
S+ wht pepper to season
 
1# Large sea scallops
 
broccoli 1 cup, 1 " flowerettes
 
1 cup green beans blanched, bias 2" cut
 
Carrots Juilienned 1 cup
 
Scallion Julienned, 1/2 cup garnish
 
1 tbl chopped peanuts garnish
 
1 lime squeeze

Use this recipie with variations with beef, chicken and shrimp. good Luck!
