I do tandoori foods over a charcoal fire, but cook offset. It works beautifully. I even use some wet wood chips to add flavour. Depending on the meat cherrywood, pecanwood, grape vines, applewood, alderwood, etc.

Now you have gone and done it. Tandoori Pomfret is my absolute favourite- ah my I am dreaming of this dish as only in India. The Oberoi in Delhi and the Sheraton make a nice one.
Dang it all, I try not to think of Tandoori Pomfret.
What have you done???? OK Vibs where are you and my Tandoori Pomfret?
