Directions

Slice tempeh and fry in a bit of olive oil until crispy. Add a splash of white vinegar at the end and swirl the tempeh around. Be careful of it spattering when you add the vinegar.
Set tempeh aside on a paper towel.
Toast the rye bread.
Mix together the 1000 Island dressing ingredients. Apply to both sides of the toasted rye bread. Add the cooked tempeh. Add the sauerkraut. Use a fork to get it out of the jar and this will let it drain a bit. Top with Swiss cheese and then put this open faced in a broiler for just long enough to melt the cheese. Top with the other slice of rye bread and enjoy!
*To make this recipe Vegan – Use Vegannaise instead of mayonnaise and Follow Your Heart Swiss Cheese instead of the regular Swiss cheese.
