Directions

Heat the oil in a pan, add the mustard seeds and fry until they pop just a few seconds.
Add the potatoes and fry for about 5 minutes.
Add the spices, lemon juice, sugar and salt to taste, stir well and cook for 5 minutes.
Add the tomatoes, stir well, then simmer for 5-10 minutes until the potatoes are tender.
Sprinkle with chopped coriander leaves to serve.
